Black Tuscan Kale

This wholesome side dish will easily become part of your weekly green veggie food rotation. This is a simple recipe which is loaded with nutrition and flavour. Read about the benefits of Tuscan Kale HERE.


Servings: 2-4 Servings

Prep Time: 5 Minutes

Cook Time: 10 Minutes


Ingredients:


  • 2-4 Bunches of black kale (remember that kale shrinks a ton when it is cooked down)

  • 3 Cloves of garlic (minced)

  • 1/4 Cup chicken broth

  • 1 Tbsp olive oil

  • Pinch of sea salt to taste


Instructions:


  1. Begin by washing and roughly chopping your kale. I usually keep the stems on as they soften during the steaming process and offer added nutritional value. If you prefer to remove parts of the stem feel free to do so now.

  2. Place a large pot on the stove on medium heat. Add your tbsp of olive oil & broth to the bottom of the pot. Add kale inside then minced garlic on top.

  3. Let the kale come to a simmer with the lid on. Stir occasionally to help mix the garlic and kale together, and add more broth if needed. (The key here is to always have one to two tbsp of broth with the kale at all times).

  4. Cook for 10 minutes or until kale is soft and dark green. Once fully cooked the kale with have lost significant volume.

  5. Season with sea salt and serve immediately as a side dish for dinner, in a stir fry or with a side of eggs for breakfast.
