Gluten Free Banancakes

Hello Wonderful Friends!


I woke up this fine Sunday morning cozied up in bed with the sound of rain tapping on my window. One thing that always comes into my mind on a rainy day is Jack Johnson's Banana Pancake song. This typically is always followed by a sudden urge to eat banana pancakes with peanut butter. Here's my simple recipes.


Servings: 2

Prep Time: 5 Minutes

Cook Time: 10 Minutes

Total Time: 15 Minutes


Ingredients


  • 2 Bananas

  • 1 1/2 Cup Oatmeal flakes

  • 1/2 Cup of Milk

  • 2 Egg

  • 1 Tsp Vanilla

  • 1 Tsp Cinnamon

  • Pinch of Salt

  • Coconut Oil


Topping Suggestions


  • Peanut butter & honey

  • Fresh sliced bananas

  • Fresh fruit

  • Maple syrup


Instructions


  1. Place all your ingredients in a high speed blender. Blend until smooth, adding any additional milk if needed.

  2. Heat a pan on medium heat and coat with a thin layer of coconut oil. Pour your pancake batter into the pan and cook for 2-3 minutes on each side. Shape your pancakes to your desired size. Repeat until you've used up all your batter.

  3. Top with maple syrup, fresh fruit or my favourite, peanut butter and honey.
