Peach & Raspberry Crumble

I've been getting a lot of requests to share this raspberry peach crisp recipe so here it is. It's unbelievably easy, delicious and will warm up any cold soul. Enjoy.




Servings: 8 Servings

Prep Time: 20 Minutes

Cook Time: 40 Minutes

Total Time: 1 Hour


Ingredients:


  • 5-6 Peaches

  • 1 Cup Raspberries

  • 1 1/2 Rolled Oats (Quick cook)

  • 1/2 Ghee, Butter or Coconut Oil

  • 1/2 Honey or other Sweetener of choice

  • 1/2 Tsp Vanilla extract

  • 1 Tbsp Flour

  • 1 Tsp Cinnamon

  •  Salt


Instructions:


  1. Preheat your oven to 375F. Core and slice your peaches lengthwise (1/2 inch thick) and wash your berries. Grease a 9x13 inch pan and set aside.

  2. Make the peach filling: In a large bowl, combine the peaches, raspberries, sugar, flour, vanilla, and a pinch of salt. Mix well to coat the peaches evenly.

  3. Make the crumble topping: In a medium bowl, mix together the oats, cinnamon and pinch of salt. Pour your oil of choice and honey overtop of the oats and mix to combine.

  4. Transfer the fruit to the prepared baking dish and press into an even layer. Sprinkle the topping evenly over top. Bake the crisp for 40 to 45 minutes, until the topping is golden brown and the filling is bubbly. Remove from the oven, and cool for at least 20 minutes before serving.
