Raw Cookie Bites (3 Ways)
In this blog post I'll be sharing my favourite recipes for healthy treats you can make in just 15 minutes. Welcome to the world of raw vegan protein bites. I've got three recipes here to satisfy any craving: "Chocolate Brownie Bites", "Sweetie Bites" and my favourite, "Gingerbread Cookies". I hope you try these recipes and enjoy them as much as I do! Servings: 25 Cookies

Food Processor
Ingredients:
Chocolate Brownie Bites
1 Cup Pecans
1/2 Cup Dates (roughly 5 dates)
2 Tbsp Cocoa Powder
1 Pinch of Sea Salt
1 Tsp Molasses
Cocoa Nibs
Chia Seeds
Sweetie Bites
1 Cup Almonds
1/3 Cup Dried Cranberries
1/3 Cup Dates
1 Tsp Honey
1 Pinch of Sea Salt
Chia Seeds
Extra cranberries to decorate the top
Gingerbread Cookies
1 Cup Cashew
1/2 Cup Dates
1 Tsp Molasses
1 Tsp Powdered Ginger
1/2 Tsp Cinnamon
1/4 Tsp Nutmeg
1/4 Tsp Cloves
1 Pinch of Sea Salt
Instructions:
Chocolate Brownie Bites
Place nuts in your food processor and pulse until you get a fine grain. Add sea salt and cocoa powder and molasses- pulse to incorporate. Next, add half of your dates (make sure you've pitted the dates to remove seed). Pulse to incorporate and check the consistency. Add remaining dates and blend until a ball forms. You should be able to pinch the dough to form a ball. Shape your dough into walnut size balls, roll each ball in chia seeds and top with cocoa nibs. Place in the fridge for 30-60 minutes.
Sweetie Bites
Place nuts in your food processor and pulse until you get a fine grain. Add sea salt, cranberries and honey- pulse to incorporate. Next, add dates (make sure you've pitted the dates to remove seed). Pulse to incorporate and check the consistency. Add more dates depending on the consistency of your dough (should be able to form a ball). Shape your dough into walnut size balls, roll each ball in chia seeds and top with dried cranberries. Place in the fridge for 30-60 minutes.
Gingerbread Cookies
Place nuts in your food processor and pulse until you get a fine grain. Add sea salt, ginger, cinnamon, cloves, nutmeg and molasses- pulse to incorporate. Next add dates (make sure you've pitted the dates to remove seed). Pulse to incorporate and check the consistency. Add more dates depending on the consistency of your dough (should be able to form a ball). Shape your dough into walnut size ball then flatten into a cookie with the help of a fork. Place in the fridge for 30-60 minutes.
